First attempt at making Kale chips actually went pretty well- and it was the easiest thing ever!
Cut the stems off, place bite size pieces of kale onto a cookie sheet, sprinkle with olive oil and salt. Bake for 20 min at 350- and TA-DA!!

Vegan Nacho "Cheese" Crack Dip
I stole this recipe from a co-worker and it was the BEST thing I've eaten in awhile... So good, I ate the entire batch all by myself. Once you make this- you'll understand why...
1 1/2 cups vegan milk (I used coconut)
1/2 cup nutritional yeast
1/4 cup all-purpose flour
1/4 cup oil
3 tablespoons tahini
1 teaspoon salt
1/4 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper

Whisk everything together until smooth, then heat on stove until it thickens. SO EASY AND SO F-ING GOOD......
"Doing It Yourself" is HARD!!
DIY is hard- but in the end, once you've put a few extra holes in the walls (worry about that later)- you feel so much more accomplished! The other day, I set out to Home Depot aka my favorite store on earth. The Depot is a mecca for DIY. I was in the market for shelving in my bathroom- specifically corner shelves... Found some cheap, white, already painted shelves. After charging up the drill, I set to work and VOILA- whole new bathroom...
On another note- here are some more fun things to do with mason jars. I got really excited about putting floss picks & cotton balls into jars, to keep on the shelf. Maybe this will remind me to floss, if I have to look at them all the time :) I also put in the small jars, Q-tips and bath salts.
Then for decoration- I threw in some fancy shells!

Fun Ways to Use a Mason Jar: Part 1
I recently acquired a few cases of mason jars, in various sizes. I'm excited for ALL the creative things I can do with them.
Using a jar as a re-usable cup is the most obvious and best thing that's ever happened to me. My mom thinks it's a "Hillbilly" alternative to formal glassware- but it's way better than a traditional water bottle.
I've made a new resolution to start juicing every day. It's a great mood booster and helps kick-start my day. A great time saver is to juice the night before and toss it in the refrigerator overnight. Trader Joes doesn't have the freshest produce- but for juicing, it's fabulous. All the ingredients are super cheap! The ingredients for one 16 oz jar costs about $5. Enjoy :)
To fill a 16 oz mason jar:
5 apples- cored
1 lb of carrots
4 celery stalks
2 lemons
A bit of ginger

Healthy Cooking Tip of the Week:
Instead of using oil to stir fry veggies or to re-heat rice (which I'm doing often, as it's hard to make just one serving of rice in the rice cooker), use a little vegetable broth instead.
